Having scoured the shops and most districts Kappabashi, I am always on the lookout for a good knife shop in the Tokyo area. I would prefer a traditional factory knife manufacturer, a commercial version. Any pointers greatly appreciated!

In the area of the Tsukiji fish market knife has several shops which specialize in sushi and sashimi knives.
